Banana Oat Muffins

Ingredient List

3-4 Bananas (mashed)
1 Egg
1/2 cup Avocado oil
1/4 cup Coconut Sugar
1 tsp Vanilla Extract
1 1/2 cups Whole Wheat or Spelt Flour
1/2 cup Whole Oats
2 tsp Baking Powder
1/2 tsp Sea Salt

Directions

  1. Preheat the oven to 350ºF. Line a muffin tray with liners or use a silicone muffin tray.
  2. Whisk the bananas, egg, oil, sugar, and vanilla extract in a large bowl. In a separate bowl, mix the flour, oats, baking powder, and salt. Slowly stir the dry ingredients into the wet ingredients until just combined.
  3. Divide the batter evenly between muffin cups. Bake for 20 to 25 minutes or until a toothpick comes out clean.
  4. Let the muffins cool in the tray until entirely cooled.   Enjoy!
