Banana Oat Muffins
Ingredient List
3-4 Bananas (mashed)
1 Egg
1/2 cup Avocado oil
1/4 cup Coconut Sugar
1 tsp Vanilla Extract
1 1/2 cups Whole Wheat or Spelt Flour
1/2 cup Whole Oats
2 tsp Baking Powder
1/2 tsp Sea Salt
1 Egg

Directions
- Preheat the oven to 350ºF. Line a muffin tray with liners or use a silicone muffin tray.
- Whisk the bananas, egg, oil, sugar, and vanilla extract in a large bowl. In a separate bowl, mix the flour, oats, baking powder, and salt. Slowly stir the dry ingredients into the wet ingredients until just combined.
- Divide the batter evenly between muffin cups. Bake for 20 to 25 minutes or until a toothpick comes out clean.
- Let the muffins cool in the tray until entirely cooled. Enjoy!
