Mediterranean Avocado Salad with Fresh Herbs

It is that time of year when you want something fresh, light and tasty!  This salad has summer written all over it.  With the fresh flavor of avocados, saltiness of olives and the flavor of dill and parsley, you can’t go wrong!  I love fat!  This salad is full of healthy fats to boost brain health and keep you feeling full and satisfied.  Don’t Fear the Fat!

Mediterranean Avocado Salad with Fresh Herbs

Ingredients

2 avocados, diced

14 oz can Hearts of Palm, sliced

1/2 cup Kalamata olives, halved

1/4 cup red onion, chopped

1 pint cherry tomatoes, halved

1 tbsp fresh dill, chopped

1 tbsp fresh parsley, chopped

1/4 cup pepitas, toasted

1 cup Arugula

1 cup Kasha, cooked

2 tbsp fresh lemon juice

1 tbsp extra virgin olive oil or avocado oil

Sea Salt

Pepper

Combine avocados, hearts of palm,  olives, red onion,  tomatoes, dill and parsley in a medium bowl.  Add Arugula and kasha.  Combine lemon juice and oil in a small bowl.  Add to salad.  Top with Pepitas.  Season with salt and pepper.  Bon Appétit!
