Lemon Ginger Tea with Honey and Mint
Ingredient List
1 liter filtered water
2 tbsp freshly sliced ginger, peel removed
Juice of 1 lemon
1 tbsp lemon zest
2 sprigs fresh mint
1-2 tbsp local honey
1 scoop collagen peptides* (optional)

Directions
Combine water and ginger in pot. Bring to a boil. Add honey and scoop of collagen peptides. Remove from heat and add lemon and lemon zest. Set aside and allow to cool. Once cool, Strain into a mason jar or pitcher and add fresh mint. Serve over ice or hot. The longer it sits, the more flavor it gets.
**You can also steep in a tea pot if available. Combine ginger, 1 slice lemon, mint and zest in tea steeper, add water and let steep for 5 minutes. Pour into glass and add honey (if using), fresh mint, lemon and collagen if using.
