Chickpea Pasta Salad {GF}
Ingredient List
1 package chickpea pasta
2 cups cherry tomatoes, cut in half
2 cups seedless cucumber, diced
1 package of feta
For the dressing:
1 T fresh lemon juice
3 T white wine vinegar
1/2 cup olive or avocado oil
1 tsp. garlic powder
1 tsp. dried oregano
1 tsp. dried basil
1/2 tsp. salt
1 tsp. sugar or honey
2 cups cherry tomatoes, cut in half

For the dressing:

Directions
- Cook pasta according to package instructions. Drain, place back in pot with a drizzle of oil to prevent sticking
- Whisk dressing ingredients together until combined
- Toss pasta with cucumbers, tomatoes and feta
- Pour dressing over pasta and toss until combined
- Let marinate together in the fridge for at least an hour before serving
