Instapot Red Beans and Rice
Ingredient List
1 tbsp. avocado oil
2 garlic cloves, minced
1/2 cup chopped white onion
1 medium carrot, chopped
1 celery stalk, chopped
1/2 cup chopped yellow bell pepper (can use any color)
1 tsp Cajun seasoning
1/4 tsp smoked paprika
1/2 tsp oregano
1 cup dried red kidney beans, sorted and rinsed
3 cups Vegetable broth or bone broth
1 cup Rice
2 cups water or broth
1 tsp olive oil

Directions
Set Instapot to sauté. Add oil and allow to heat for 3-4 minutes. Add garlic, onion, carrots, pepper and celery. Mix well and allow to sauté for about 1-2 minutes. Add in Cajun seasoning, paprika and oregano and continue to sauté for another 2 minutes. Add beans and broth. Cover with top and lock in place. Turn steam release handle to Sealing position. Cancel sauté and select Beans or Manual/Pressure Cook for 30 minutes.
Meanwhile, prepare rice. Heat 1 tsp of olive oil in pan over medium. Add rice and stir for about 1 minute. Add Water or broth. Bring to a boil, then cover and reduce heat to simmer. Cook for about 15 minutes.
When beans are finished, ensure the steam is released. Serve over rice.
