Roasted Sweet Potatoes with Kale and Shallots

Another take on “greens and beans”, but with sweet potatoes.  The savoy flavor of the shallots, garlic and  potatoes is perfect for the winter months!

Enjoy!

1 medium sweet potato or yam, cut in 1″ cubes

1 bunch kale, washed and chopped

1 shallot, minced

1 clove garlic, sliced

Extra Virgin Olive Oil

2 tsp Fresh Lemon Juice

Salt

Freshly ground pepper

Preheat oven to 350 degrees Fahrenheit.

Chop potatoes and mix with 1-2 tsp olive oil, sprinkle with salt and pepper. Spread on baking sheet and place in oven for 30 minutes until soft, but crisp.

In a medium saute pan, heat 1 tbsp olive oil over medium heat.  Add garlic and shallot.  Cook for 3-5 minutes until slightly browned.  Add Kale and potatoes.  Cover and allow to cook for 5 minutes or until kale is wilted.  Add salt and pepper to taste.  Remove from heat and add lemon juice.
